This is an extended fermentation, comes from Fresno town in the Tolima department of Colombia, grown at 1400 meters in El Vergel state farm on volcanic soil near the Black Mountain from Caturra varietal.

The coffee presents complex layers of tropical and red fruits depending on the brew method. With a dashing sweetness like dark grapes, and a beautiful aroma like orange blossom.

Suggested recipe:

We recommend a longer rest before brewing the coffee, at least 20 days to see its full potential

 

Pour over recipe:

Tool: Timemore Crystal Eye V60

Coffee weight: 19g

Grind size: medium fine

Water temperature: 94

Water volume: 285 ml

Preparation time: 2:20

 

Pre wet 40ml and wait 40sec

Pour over all around the coffee until 180 ml and wait 10sec

Pour around the center until 240 ml and wait 5sec

Pour on the center until 285 ml

 

Pour over recipe:

Tool: Chemex

Coffee weight: 18g

Grind size: medium

Water temperature: 94

Water volume: 275 ml

Preparation time: 2:40

 

Pre wet 40ml and wait 40sec

Pour over all around the coffee until 150 ml and wait 10sec

Pour on the side until 210 ml and wait 10sec

Pour around the center until 275 ml
